Cabernet Sauvignon's nickname, "The King of Red Grapes" is well earned. Of all the grapes in the world that produce fine red wine, this is the most widely used and the best known. The grape originated in the Bordeaux region of France. Many fine varietal wines are produced from Cabernet Sauvignon, but since it is a superb wine for blending, it is often seen as a partner with other grape varieties. The most frequently seen are Merlot and Shiraz.
A typical varietal of Cabernet Sauvignon is full flavoured and somewhat harsh and tannic when young. But the wine ages well, particularly in oak, and matures into a smooth velvety wine, with complex nuances of flavour, a great nose, and an exquisite balance. When blended with other grape varieties, Cabernet Sauvignon provides an ideal "structure" for the other grapes to exhibit its best qualities. For example, Cabernet Sauvignon's wonderful deep cherry red colour, high tannin levels and propensity to age gracefully are an ideal background for grapes with spiciness, such as Petit Verdo or grapes with higher aromatic qualities such as Cabernet Shiraz.
Cabernet Sauvignon owes much of its international popularity to its extraordinary ability to grow anywhere in the world with a climate suitable for viticulture. Not only does it grow well and flourish, but it also exhibits the same characteristics as it does in its homeland! Cabernet Sauvignon is very versatile as a partner to food and is particularly enjoyable with beef, lamb, medium cheeses and pastas.
